Diamond Wedding Menu – 3 Course

Our Diamond Menu is provided by our very talented Karen Berry from Northern Ireland. Her menu offers a selection of traditionally inspired and much loved family recipes, made with love and enhanced with a French twist.

She has been a valued member of the Chateau’s team for many years, developing her expertise and variety of menus throughout this time. She originally ran her own restaurant in parallel to chateau but has now decided to devote her time solely to our weddings.

Please Note:

The catering package includes serving staff for the canapés and drinks reception, waiters for the formal sit-down meal, luxury linen napkins and tablecloths, wine, water & champagne glasses, cutlery, white crockery, salt & pepper shakers, water jugs, bread baskets & coffee cups.
Final catering numbers, menu choices and special dietary requirements must be confirmed 8 weeks before the wedding. After this, no further alterations may be made.
We are able to cater for allergies and other food requirements. Please contact us to arrange this.
Please check your supplier contracts, as they may require you to provide a staff meal for e.g. your photographer, band, DJ etc. Staff meals can be provided at a reduced rate.
Please note that some produce is seasonal and therefore subject to availability, small modifications to the menu may need to be made, if this situation arises we will inform you.

A selection of Canapes served for your guests (5 per person):

♡ Chicken Teriyaki Skewers

♡ Duck pâté, toasted brioche & red onion marmalade

♡ Samosa with coconut curry sauce

♡ Local Goat’s Cheese & walnut toasts drizzled with honey (V)

♡ Caprese: Cherry tomato, Mozzarella & fresh basil served with a pesto drizzle (V)

♡ Vegan Canapes upon request: Mushroom Tapenade or Spicy Watermelon Shots

Choose 2 starters, plus a 3rd vegetarian/vegan option as required:

♡ Chicken Cezar Salad topped with garlic croutons

♡ Duck Salad: Duck breast, shredded confit & strawberry salad served with balsamic reduction

♡ Prawn feuilletés served in a shallot & garlic cream sauce

♡ Smoked salmon, prawn & avocado tower

♡ Carpaccio of beef topped with pinenuts, capers, onions, parmesan & rocket salad

♡ Traditional French Onion Soup topped with a Cheese Gratin

♡ Coats cheese roasted red pepper and pesto tartlet served with a fresh basil dressing (V)

♡ Onion Tarte Tatin with Feta Cheese, salad and rosemary (V)

♡ Duo of hummus served with warm pita breads (Ve)

Main Course

Choose 2 main courses, plus a 3rd vegetarian/vegan option as required:

♡ Confit of duck, dauphinoise potatoes, green beans & jus

♡ Braised lamb shank, served with a mustard mash, seasonal vegetables and jus

♡ Filet mignon of pork served with roast potatoes, creamy cabbage & jus

♡ Pan fried fillet of salmon on a bed of new potatoes, topped with fresh spinach and lemon sauce

♡ Seabass served with a minted pea risotto

♡ Supreme of chicken with crushed potatoes & creamy chorizo sauce

♡ Traditional French beef served with baby roast potatoes & seasonal vegetables

♡ Fillet of cod, creamy mash potato and parmesan sauce served with roasted cherry tomatoes

♡ Wild Mushroom Ravioli served in a creamy sauce topped with parmesan & rocket (V)

♡ Fragrant vegetable Thai green curry served with coconut and coriander rice (Ve)
